Cinnamon Honey Baked Apples with Walnuts & Raisins

Ingredients

  • 4 Apples
  • 2 tbsp Unsalted Butter
  • 2 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/4 cup Chopped walnuts or pecans, plus extra for topping
  • 1/4 cup Black or golden raisins or dried cranberries
  • Salt
  • 1/2 cup orange or apple juice
  • Honey to drizzle

Instructions

  • Preheat oven to 180 degrees C. Spray a pie plate or square pan with non-stick cooking spray. Wash apples and cut into the stem of each, using a spoon to scoop out the core and seeds, but taking care not to dig or cut through the bottom of the apple.
  • Mix together the butter, brown sugar, cinnamon and apple pie spice until smooth. Add the walnuts and raisins or cranberries, stir and divide the mixture equally among the apples, stuffing the center of each. Place into the prepared pan.
  • Top each apple with a sprinkle of chopped walnuts and press them into the mixture. Give a generous drizzle of honey over the top of each apple. Add just enough juice or water to the pan to cover the bottom. Bake at 180 degrees C for about 30 to 40 minutes or until tender, basting occasionally.
