Heat oven to 180 degrees C
Prick potatoes, rub with dressing; place on baking sheet sprayed with cooking spray. Bake 1 hour or until tender.
Fry diced Bacon and set aside.
Cut a cross on top of each potato. Open each potato by squeezing the ends towards one another.
Stuff the opening with cottage cheese and bacon. Sprinkle with grated cheddar.
Place under the grill until cheese is golden brown and bubbly.
