Vegetable Fried Rice


  • 2 tbsp Olive Oil
  • 1 Onion
  • 3 Cloves Garlic
  • 1 tbsp Ginger
  • 1 kg Frozen Mixed Vegetables
  • 4 cups Rice
  • 3 Eggs Scrambled
  • 2 tbsp Soy Sauce
  • 2 tsp Sesame Oil


  • Prepare frozen vegetables according to directions on package.
  • While the vegetables cook, scramble the eggs in a frying pan, making sure to break the egg up into small pieces.
  • Heat olive oil in large skillet over medium-high heat. Add onion, garlic and ginger and cook for 5 minutes or until onion is cooked and translucent.
  • Add the steamed vegetables, rice, scrambled eggs and soy sauce. (Also add oyster sauce here, if desired.) Continue to saute, stirring occasionally, for an additional 3 minutes. Stir in sesame oil and cook for one minute, then remove from heat. Serve immediately.
