Gourmet Burger- Pineapple Jalapeño Burgers with Chipotle Mayo

Ingredients
TOPPINGS
- 4 Hamburger Patties
- Salt and Pepper, to taste
- 4 Pineapple Rings
- 2 Jalapeño Peppers
- 4 Slices of Cheese
- 1/3 Fresh Lettuce
- 2 Sliced Ripe Tomatoes
- 4 Chipotle Mayo Butter-Toasted Bread Rolls
- 200g Streaky Bacon
FOR CHIPOTLE MAYO
- 2 Chipotle Peppers in Tomato Sauce
- 3 tbsp Mayonnaise
Instructions
For the Chipotle Mayo
- In a small bowl, combine the chipotle peppers, tomato sauce, and mayo. Mix well. Season with salt and pepper to taste.
For the Burgers
- In a medium saucepan over medium heat, cook the burgers until burger is no longer pink, about 6-8 minutes on each side.
- Meanwhile, grill the pineapple rings and jalapeño peppers until cooked, about 2-3 minutes.
- Fry the streaky bacon until crisp, about 10 minutes.
- Slice the jalapeno peppers. Top each burger patty with a slice of cheese and cook until just melted.
- Remove from grill and place on bread rolls. Top the buns with a generous spoonful of the chipotle mayo, lettuce, tomato, grilled pineapples, bacon and jalapeños. Serve immediately.
