Gourmet Boerewors Braaibroodjie with Homemade Chakalaka

Ingredients

Homemade Chakalaka

  • 3 tbsp Olive oil
  • 2 cups Large yellow onion finely chopped
  • Salt
  • 1 Green, red, and yellow bell pepper, (one of each) finely chopped
  • 2 tbsp Mild curry powder
  • 2 Green Chillies minced
  • 2 Large garlic cloves minced
  • 5 cm Piece of ginger peeled and grated
  • 5 Large carrots scrubbed and coarsely grated
  • 1 tin Diced tomatoes
  • 2 tbsp Tomato paste
  • 2 Thyme sprigs
  • Freshly ground black pepper

Roosterbrood Dough

  • 1 kg White bread flour
  • 7 g Sugar
  • 2 g Salt
  • 10 g Instant yeast 
  • 500 ml Water Lukewarm
  • 15 ml Butter Melted

Braaibroodjie

  • 500 g Boerewors thick or thin
  • 1 cup Cheddar Cheese grated

Instructions

Homemade Chakalaka

  • In a large pan over medium-high heat, heat the olive oil. Add the onion and season with salt; cook, stirring, until translucent, 10 minutes. Stir in the bell peppers, curry powder, chiles, garlic, and half of the ginger; cook, stirring, 2 minutes. Add the carrots, season with salt, and stir. Add the tomatoes and their juices, 1 cup water, and the tomato paste, stirring to combine. Lower the heat to medium and simmer until the vegetables have softened and the mixture has thickened slightly, about 15 minutes. Remove and stir in the thyme, the remaining ginger, and salt and pepper to taste.

Roosterbrood Dough

  • Combine the flour, sugar and salt and sprinkle the instant yeast on top. Add just enough lukewarm water to form a stiff dough. Knead the dough until it is elastic and no longer sticks to your hands. Brush the dough with melted butter or margarine and cover. Leave to rise in a warm place until doubled in bulk. Knead down and shape into small balls. Flatten the balls into squares the size of a slice of bread and sprinkle with a little flour. Toast lightly on the fire. You will continue to cook this later.

Braaibroodjie

  • Braai your Boerewors until cooked. If you have used thick Boerewors slice the wors into pieces to fit the bread and then in halves. Layer Boerewors and Chakalaka between two pieces of Roosterbrood and add cheese inside. Return to the fire until cheese is melted and the bread is cooked to perfection.
