Cheesy Baked Potatoes With Bacon

  • 4 Potatoes
  • 1 cup Cottage Cheese
  • Virgin Olive Oil
  • Italian Salad Dressing
  • 200 g Bacon Diced
  • 1 cup Cheddar Cheese Grated


  • Heat oven to 180 degrees C
  • Prick potatoes, rub with dressing; place on baking sheet sprayed with cooking spray. Bake 1 hour or until tender.
  • Fry diced Bacon and set aside.
  • Cut a cross on top of each potato. Open each potato by squeezing the ends towards one another.
  • Stuff the opening with cottage cheese and bacon. Sprinkle with grated cheddar.
  • Place under the grill until cheese is golden brown and bubbly.
