Cheesy Baked Potatoes With Bacon

Ingredients
- 4 Potatoes
- 1 cup Cottage Cheese
- Virgin Olive Oil
- Italian Salad Dressing
- 200 g Bacon Diced
- 1 cup Cheddar Cheese Grated
Instructions
- Heat oven to 180 degrees C
- Prick potatoes, rub with dressing; place on baking sheet sprayed with cooking spray. Bake 1 hour or until tender.
- Fry diced Bacon and set aside.
- Cut a cross on top of each potato. Open each potato by squeezing the ends towards one another.
- Stuff the opening with cottage cheese and bacon. Sprinkle with grated cheddar.
- Place under the grill until cheese is golden brown and bubbly.
