Avocado And Bacon Egg Boats

Ingredients

  • 2 Avocados Halved and pitted
  • 4 Bacon Slices
  • 4 Eggs
  • Salt
  • Black Pepper
  • 1 tbsp Chopped Chives

Instructions

  • Preheat oven to 180ºC. Line a baking sheet with parchment paper. Set aside.
  • Heat a large skillet over medium and cook the bacon until crisp.
  • Spoon out the avocado around the area the pit was to make the hole a bit bigger, then put avocado on the baking sheet. Place a slice of bacon in each avocado half. Crack an egg into each, making sure to keep the yolk in the hole.
  • Bake for 12-15 minutes until eggs cook through. The yolk will jiggle when if you shake the pan, but whites will be set.
  • Add salt and pepper to taste and top with chopped chives.
